Family Food: Autumn Breakfast Cereal

As you’re looking out your kitchen window at the golden-honey leaves on the trees and on the ground, you can’t help but think about the trees soon being stripped of their leaves, and fresh, white snow covering the branches. Winter is just around the corner and change is coming. You wish you could hold onto those crisp, cool mornings, staring at the marvelous mosaic of colors but you know they are evanescent. You are also wise enough to know that even though something new is coming, it doesn’t mean it’s necessarily bad, just different. It may even be something you want; or need. So before you say goodbye to autumn, savor these last moments of radiant east-coast colors and have yourself a hearty breakfast that is as colorful as the foliage and as satisfying as the warmth you feel when you realize it’s time for a change.

Autumn Breakfast Cereal

This quinoa-based dish is the perfect autumn meal; it’s got heartiness to it, but also a lot of crunch from the nuts and tanginess from the apples and raisins. It is a complete meal with lots of protein from the quinoa and nuts, dairy from the milk and omega 3’s from the walnuts. Plus the apples and spices are a boon of antioxidants.


1 cup dry quinoa
1 cup soymilk/almond milk
½ tsp nutmeg
1 tsp cinnamon
½ tsp vanilla
¼ cup golden raisins
Stevia to taste
1 apple, chopped into cubes
½ cup almond slivers
½ cup walnuts


Cook quinoa according to instructions.

In small saucepan, heat milk. When boils remove from heat and add nutmeg, cinnamon, vanilla, 2 tsp (or 2 packets) of stevia, raisins. Mix well.

In a big bowl pour the nuts and apple cubes. Add quinoa and milk mixture. Add two more tsp or packets of stevia. I often add a little more stevia to my personal bowl to sweeten it more.

Best served warm.
