Pasta — we like Giada DeLaurentiis’ Gobetti Pasta (from her line for Target Kitchen)
Extra Virgin Olive Oil (we used it in a mister)
Feta Cheese (we used reduced fat)
Optional: Mozzarella Cheese
Cook and drain the pasta (follow directions on the box). You can use any pasta – Giada’s Gobetti worked perfectly. Chill pasta in refrigerator for 20 minutes. When the pasta is chilled, mist a little olive oil on it and toss so the oil is distributed.
Cut up the strawberries. We recommend organic strawberries, since regular strawberries are high in pesticides.
Add strawberries and feta, you can also cut up some mozzarella for an extra dairy kick. Serve with baby carrots or a green vegetable on the side. Kids will think they are getting away with something because strawberries are in their pasta — you’ll know that they’re getting a great big dose of Vitamin C!
